Festive Bariatric-Friendly Recipe of the Day

Our High-Protein Peppermint Mocha Smoothie and Low-Carb Eggnog are festive drinks designed to keep you on track with your wellness goals while enjoying the flavors of the season. High-Protein Peppermint Mocha Smoothie

Ingredients:

  • 1 cup unsweetened almond milk (or milk of choice)
  • 1 scoop chocolate or vanilla protein powder (unsweetened or low-sugar)
  • 1 tbsp unsweetened cocoa powder
  • 1/2 tsp peppermint extract (start with a small amount, as peppermint extract is strong!)
  • 1/4 cup brewed coffee (cooled) or 1/2 tsp instant coffee granules (optional for extra mocha flavor)
  • 1/2 cup ice
  • Optional garnish: crushed peppermint or a few fresh mint leaves

Instructions:

  1. Add all ingredients to a blender: almond milk, protein powder, cocoa powder, peppermint extract, brewed coffee, and ice.
  2. Blend until smooth and creamy.
  3. Taste and adjust peppermint extract if needed. Pour into a glass and enjoy!
  4. Optionally, top with a sprinkle of crushed peppermint or mint leaves for a festive touch.

Low-Carb Eggnog

Ingredients:

  • 1 cup unsweetened almond milk (or milk of choice)
  • 1/2 cup canned coconut milk or heavy cream (for richness)
  • 1 large egg yolk
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg (plus extra for garnish)
  • 1-2 tsp of a natural sweetener like monk fruit or stevia, to taste

Instructions:

  1. In a small saucepan, whisk together almond milk, coconut milk (or cream), and egg yolk over low to medium heat.
  2. Stir continuously until the mixture thickens slightly, about 5 minutes. Do not let it boil.
  3. Remove from heat, then stir in vanilla extract, cinnamon, nutmeg, and sweetener.
  4. Pour into a mug, garnish with a sprinkle of nutmeg, and enjoy warm or chilled.
