Healthy Holiday Baking Challenge

Here’s a festive, bariatric-friendly dessert to satisfy your holiday sweet cravings without overloading on sugar! These high-protein mini cheesecake bites are creamy, delicious, and easy to make. Start warming the oven and prepare this high-protein, low-sugar treat that you can enjoy!

High-Protein Mini Cheesecake Bites

Ingredients:

  • 1 cup low-fat Greek yogurt
  • 8 oz light cream cheese, softened
  • 1/4 cup almond flour (or finely ground almonds)
  • 1/4 cup sugar substitute (e.g., monk fruit sweetener)
  • 1 large egg
  • 1 tsp vanilla extract
  • Fresh raspberries for topping
  • Crushed almonds for garnish

Instructions:

  1. Preheat oven to 325°F (163°C). Line a mini muffin pan with paper liners or lightly grease with cooking spray.
  2. Make the crust by mixing almond flour with a teaspoon of the sugar substitute. Press about a teaspoon of this mixture into the bottom of each muffin cup.
  3. Prepare the filling by beating together Greek yogurt, cream cheese, remaining sugar substitute, egg, and vanilla extract until smooth.
  4. Fill each muffin cup about 3/4 full with the cheesecake mixture.
  5. Bake for 12-15 minutes or until centers are set. Allow to cool completely, then chill in the refrigerator for at least 2 hours.
  6. Garnish with fresh raspberries and a sprinkle of crushed almonds before serving.
