Healthy Holiday Baking Challenge
Here’s a festive, bariatric-friendly dessert to satisfy your holiday sweet cravings without overloading on sugar! These high-protein mini cheesecake bites are creamy, delicious, and easy to make. Start warming the oven and prepare this high-protein, low-sugar treat that you can enjoy!
High-Protein Mini Cheesecake Bites
Ingredients:
- 1 cup low-fat Greek yogurt
- 8 oz light cream cheese, softened
- 1/4 cup almond flour (or finely ground almonds)
- 1/4 cup sugar substitute (e.g., monk fruit sweetener)
- 1 large egg
- 1 tsp vanilla extract
- Fresh raspberries for topping
- Crushed almonds for garnish
Instructions:
- Preheat oven to 325°F (163°C). Line a mini muffin pan with paper liners or lightly grease with cooking spray.
- Make the crust by mixing almond flour with a teaspoon of the sugar substitute. Press about a teaspoon of this mixture into the bottom of each muffin cup.
- Prepare the filling by beating together Greek yogurt, cream cheese, remaining sugar substitute, egg, and vanilla extract until smooth.
- Fill each muffin cup about 3/4 full with the cheesecake mixture.
- Bake for 12-15 minutes or until centers are set. Allow to cool completely, then chill in the refrigerator for at least 2 hours.
- Garnish with fresh raspberries and a sprinkle of crushed almonds before serving.
